I'm just wondering what is the best way to store palm sugar, and how long it keeps once packaging has been opened?

When storing palm sugar, it is essential to restrict exposure to air - therefore keep a lid on and store in dry cupboard eg. pantry. Never use a damp spoon. It's much easier of course in a dry climate such as Alice Springs.
Having said all that, if sugar has "clumped", it will melt into the wet ingredients anyway. The sugar will keep for ages and if it hardens in a clump, you can always grate it into the recipe. Hope that helps.
