Tetsuya’s is so tough to get into and so far out of the everyday in terms of both the structure of its long 12-course dégustation menu and its $210 price tag that the flexibility and friendliness of its army of staff can come as something of a surprise. Once you’ve made it past the gates (literally) to its neo-Kyoto rooms, they’ll do everything they can to put you at ease. A sake with the orange and blackbeantinged raw mulloway? A Japanese white with the sublime custard of sea urchin and fresh wasabi? It’s yours. You’re a seasoned diner tired of the signature kombu ocean trout dish? Try this splendid mackerel poached in oil with pickled carrots and tiny potatoes. A goat’s milk ice-cream with sorrel granita, meanwhile, threatens to upset the idea that the wheels fall off at dessert. A truly cosmpolitan Australian restaurant like no other, Tetsuya’s remains both vital and impressive.
