If à la carte tempts, start with the briny gravlax of ocean trout, refreshed with peppery radish and tangy micro-herbs; a perfect foil for the heartier dishes to follow. Char-grilled saltbush lamb rump shows judicious sweetness to match a rich accompanying ratatouille, but rabbit and pork sausages, in all their gamy glory, are the showstoppers on the day.
