The Chairman & Yip

The Chairman's foray into the local scene in the early '90s with its bold and new Eurasian manifesto overhauled the capital's concept of Chinese. A decade and more on, it still packs out a split-level 150-seater space. It's still as eclectic in its look as the melange of pan-Asian, Middle Eastern and European flavours on the menu. And what keeps bringing them back are the duck pancakes, the peppery and sweet characters of a beef and scallop hotpot and spicy morsels of roasted Portuguese-style chicken. But it's time the Chairman recovered some of his revolutionary zeal by mixing it up in the kitchen, offering new and interesting specials and bringing back some verve and engagement to the floor. The wine list is good, but there's scope for greater and more diverse wine options by the glass, and why not let guests see their selection poured at the table?
