The Source is the premier dining venue at the Moorilla Winery and MONA, Hobart’s extraordinary new private museum and gallery. It is a beautiful space: simple, clean-lined and full of light. The food doesn’t quite follow the same principles. Dishes are complex, with many components on each plate. When it’s good, as with poached peach with spiced jelly, crème fraîche ice-cream and almond crunch, it’s brilliant, but even when it’s not, it’s still enjoyable and always pretty. You need a certain tolerance, however, to see smoked oyster oil as a worthy addition to already superior abalone and to appreciate “oyster coats” painted on your perfectly cooked ike-jime fish. What’s beyond refute, though, is that chef Philippe Leban always works with the very best produce. Service is attentive and professional and the wine list deftly mixes Moorilla’s own offerings and a good range of other choices..
