Thomas Corner Eatery, a relative newcomer, overlooks the Noosa River and has a breezy, laid-back air, but the food has a subtle sophistication. Take owner/chef David Rayner’s Bangalow pork and thyme sausage roll – the savoury meat is sweetened with apple, elevating simple, honest tucker to smarter status. The addition
of lemon flake to Moreton Bay bugs, served with melon cubes and limoncello dressing, lends an unexpected and appealing summery twist. Wines by the glass arrive in quirky science-lab beakers.
