Trattoria Cadorna

Opened in 1947 by Giovanni and Gabriella Tudini, this old-style trattoria is situated in the political heart of Rome and specialises in catering services for employees in various ministries. Unpretentious and matter-of-fact, it serves classic Roman cooking - rigatoni with pajata (calf's intestines), spaghetti alla carbonara, bucatini alla matriciana (with tomato, bacon and chilli) - accompanied by the simple but eminently quaffable wines of the Castelli Romani. With its cheery, relaxed atmosphere, this is the ideal place to gather round the table to talk business (and politics).
