Farro recipes

Farro can be used in almost any dish, from a robust salad to accompany hearty beer-glazed beef short ribs to a new take on risotto with mushrooms, leek and parmesan. Here are 14 ways with this versatile grain.

Aløft

There's nothing new about Nordic interiors - blond timbers, concrete surfaces, warm, mid-century charm without the twee - and thank heavens for that. It's a style that augments the beauty of everything around it, in this case, gorgeous Hobart harbour, which makes up one whole wall. What is new here, however, is the food - by veterans of Garagistes, which once dazzled diners down the road, Vue de Monde in Melbourne and Gordon Ramsay worldwide. There's a strong Asian bent, but with Tasmanian ingredients. In fact, the kitchen's love of the local verges on obsessive - coconut milk in an aromatic fish curry is replaced with Tasmanian-grown fig leaf simmered in cream to mimic the flavour. Other standouts include a gutsy red-braised lamb with gai lan and chewy cassia spaetzle, pigs' ears zingy with Sichuan pepper and a fresh, springy berry dessert. While the food is sourced locally, the generous wine list spans the planet.

Secret Tuscany

A far cry from Tuscany’s familiar gently rolling hills, Monte Argentario’s appealing mix of mountain, ocean, island and lagoon makes it one of Italy’s hidden treasures, writes Emiko Davies.

Moon Park to open Paper Bird in Potts Point

No, it’s not a pop-up. The team behind Sydney’s Moon Park is back with an all-day east-Asian eatery.

Grilled apricot salad with jamon and Manchego

Here we've scorched apricots on the grill and served them with torn jamon, shaved Manchego and peppery rocket leaves. Think of it as a twist on the good old melon-prosciutto routine. The mixture would also be great served on charred sourdough.

Kisume, Melbourne

Chris Lucas has flown in talent from all over the world, including Eleven Madison Park, for his bold new venture. Here’s what to expect from Kisume.

Where to stay, eat and drink in Kuala Lumpur, Malaysia

Beyond Kuala Lumpur's shopping malls, Lara Dunston finds a flourishing third-wave coffee scene, tailored food tours and charming neighbourhoods.

Brae

Prepare to enter a picture of the countryside framed by note-perfect Australiana but painted in bold, elegant and unsentimental strokes. Over 10 or more courses, Dan Hunter celebrates his region with dishes that are formally daring (Crunchy prawn heads! Creamy oyster soft-serve! Sea urchin and chicory bread pudding!), yet rich in flavour and substance. The menu could benefit from an edit, but the plates are tightly composed - and what could you cut? Certainly not the limpid broth bathing fronds of abalone and calamari, nor the clever arrangement of lobster played off against charred waxy fingerlings under a swatch of milk skin. The adventure is significantly the richer for the cool gloss of the dining room, some of the most engaging service in the nation and wine pairings that roam with an easy-going confidence. Maturing and relaxing without surrendering a drop of its ambition, Brae is more compelling than ever.

Best Resorts on the Gold Coast

Q1

Q1

Whatever your need — relaxation, stress relief, general wellness or escape — the élite resorts of the Gold Coast know how to pamper. Here are five of the best:

Dreamtime Makeover: Q1 Resort & Spa
In the heart of Surfers Paradise, Q1's funky elliptical design is a monument to architectural modernity. Inside, the Q1 Spa offers indulgent treatments from the other end of time, with therapies based on traditional Aboriginal values.

Experience the unique exfoliation sensation of crushed pearl, desert- and sea-salt scrubs, cocoons of ochre, peat mud, sea moss minerals and essential oils, as well as opulent wet treatments.

Downstairs in the piazza you'll find Absynthe Restaurant, a sophisticated French fine-dining establishment created by two-Michelin-star chef Meyjitte Boughenout.

Soul Therapy: Hilton Hotel Eforea Spa
Another iconic Surfers' resident is the Hilton Hotel, home of Eforea Spa, which emphasises organic products and results-driven practices. Eforea's menu of treatments includes a range designed specifically for men, including warm bamboo rolling and deep muscle massage. "Express add-ons" are available for those who need to relax in a hurry.

The Hilton is also home to Luke Mangan's Salt Grill and his concept-deli, The Food Store, renowned for its selection of European charcuterie, browse-worthy Australian and imported wines, cheeses, olive oils, and coffee.

Gwinganna Lifestyle Retreat

Strategic Rest: Gwinganna Lifestyle Retreat
Just 15 minutes from Burleigh Heads beach, Gwinganna's plateau site in the Tallebudgera Valley affords both ocean and valley views. Villa, suite, cottage and lodge accommodation options cater to all tastes and their locally-sourced organic cuisine was developed to reflect their ethos of "Low Human Intervention food [Low HI]". Pick up their book Gwinganna...from garden to gourmet to keep the Zen going at home.

Gwinganna promotes what they call "strategic rest", incorporating naturopathy, emotional wellness, functional movement, as well as more mainstream therapies.

Disconnect: Nightfall Wilderness Camp
To seriously get away from it all, be one of the first to experience the brand-new Nightfall Wilderness Camp, nestled in a sub-tropical rainforest just 45 minutes from the Gold Coast and Brisbane.

You retain a touch of luxe - orraw-luxeas owners Steve and Heidi Ross call it - with king beds, high thread-count cotton sheets, woollen quilts and organic toiletries standard in the spacious canvass tents. Think campfire chats, double hammocks and a massage by the creek or in the forest.

Following sunset drinks, enjoy a fire-cooked organic meal, including wild bush tucker.

"Settling-in period" discounts apply until 30 June, 2014.

Workout and Chill Out: Palazzo Versace's Aurora Spa Retreat
Gold Coast's pre-eminent resort is still Palazzo Versace and their in-house Aurora Spa Retreat menu is as fabulous as the four-poster cabanas surrounding its exclusive water salon - a space less luxurious resorts would call a pool.

Aurora's pampering options include signature steam treatments, massages, hand and feet therapies, and facials. Their luxury spa products, Aurora Spa Rituals, make fine heaven-at-home keepsakes.

Balance your spa treatment with a workout at the state-of-the-art Fitness and Wellbeing Centre. Get your heart pumping with a cardio machine, sign up for a boot camp or personal training session, or stretch out with a yoga or Pilates class.
