1980s recipes

Australia saw some bold moves in the ’80s, and we’re not just talking hairstyles. Greater cultural references started peppering the menus of our restaurants, and home-grown ingredients won a new appreciation. The dining scene was coming of age and a new band of pioneers led the charge.

Roasted cauliflower salad with yoghurt dressing and almonds

The cauliflower is roasted until it starts to caramelise, which adds extra depth of flavour to this winning salad. Serve it warm or at room temperature.

Melbournes finest meet Worlds Best

Leading chefs descend on Melbourne in April for The World’s 50 Best Restaurants. We asked local hospitality folk who they’d abduct for the day and where they’d take them to show off their city. There may be coffee, there may be culture, but in the end it’s cocktails.

Here, we've made the dough in a food processor, but it's really quick and simple to do by hand as well. If the dough seems a little too wet just add a little more flour.

Hôtel de Tourrel, Saint-Rémy-de-Provence

Saint-Rémy-de-Provence has all the slow charm of a Provençal market town with the attractions of a much bigger metropolis. Twenty kilometres from Avignon, the town is synonymous with Vincent Van Gogh, who produced about 150 paintings during a year here, and it remains a favourite with the many artists who live and work in the region.

Adding to the appeal of St-Rémy's galleries, Roman ruins, boutiques and a handful of highly regarded restaurants is the new seven-suite Hôtel de Tourrel. The impressive stone features of a 17-century mansion in the centre of town are matched with cool white walls, parquet floors and a mix of handmade and mid-century furnishings. Room Two is said to be the salon in which Charles Gounod's opera Mireille premiered in 1863. There's a "nouveau Mediterranean" restaurant on the ground floor and a wine bar stocked with grand crus and labels from some of the 34 nearby appellations.
