As the sun sets Wasabi-side over Noosa River, expectant diners are given the choice of tatami seating or regular tables. Either way, proceedings start off on the right foot with a satisfying white miso soup rich in umami. Nigiri sushi showcases meticulously prepared Mooloolaba tiger prawns, yellowfin tuna, cuttlefish, eel and scallop, while futomaki rolls hide under slices of ocean trout, kingfish and more of those local tigers. Gyoza dumplings, served with a spicy ponzu sauce, are packed with flavour even if they arrive at the table a little bit torn and soggy (pastry this translucent can sometimes be unforgiving). Delicate and crisp tempura served with matcha salt hovers somewhere between pale and just-golden nirvana. The likes of plum-wine brûlée and Champagne jelly with raspberry and baby shiso sorbet and sour yoghurt gelato ensure things finish on a high.
