Waiter troubles

I have just opened a restaurant. The food is under control, but we are having a hard time with waiters. How can I find a good batch of waiters?

Madeline Nieuwenhuizen, a manager at Sydney restaurant Aria, writes:

The unfortunate reality is that there are just not enough good, experienced waiters around. Even for top-end restaurants.

Interviewing is only part of the proccess and will hopefully weed out the time wasters. Once you find someone with a decent work ethic, basic waiting skills and acceptable communication skills – training is the key.

Ensure you have fool-proof systems in place and provide on-going staff training.

Over time you’ll build a strong, skilled team of floor staff.
