From a humble hen-yolk and smoked-milk kind of place, Biota has grown into something of a regional hub offering its accommodation, lounge menu, and foraging trips. Among it all, James Viles has trained his senses on local produce: the blue cheese rolled in dehydrated pear as an opening snack on the teased and tweezed tasting menu is from Pecora Dairy; the honey in a toasty dessert bowl from their own bees. Sometimes there's fumbling in the execution, though. A peach rose atop stracciatella, say, is arresting, and elevated by burnt-peach juices, but arrives fridge-cold. Angus karubi with cherry and shiso is more like it. So too the enthusiasm on the floor, the fealty to local winemakers and the killer juice menu. Take the beef, add the whole flatheads on the lounge menu, and consider what Viles could do if he set the tweezers down and let his instincts off the leash.
