James Viles takes Mother Nature seriously. At Biota Dining, the kitchen and the environment are closely connected, with a focus on locally gathered and grown produce. And while a summer pumpkin sorbet could be better executed, his edgy tasting menu has plenty of high points. Rivalling early Pink Floyd song titles in the length of their names, dishes like "A Selection of Fermented Ingredients On Toast" are high on style and subtlety. In this case, perfect spheres of puréed black garlic, peas, chickpeas and crème fraîche work brilliantly on just-toasted molasses rye. Flathead cooked over coals also stands out, enriched by yeast butter and lifted by the acidity of pink grapefruit. A sharp wine and non-alcoholic drinks list also plays to the local and bespoke theme. And despite a banjo-heavy playlist more suited to spareribs and hoedowns, warm service and cool Scandi furniture make Biota a welcome place to enjoy the best of the region.
