Ever had a charred eggplant sorbet, or creamy, frozen chunks of tahini? How about together, in a dessert, with Arabic coffee and cacao shards on top? Ben Williamson and the team subvert Middle Eastern cuisine, hijacking typical ingredients to create share plates as complex and surprising as the richly detailed fit-out of this must-visit James Street eatery. Aleppo pepper oil adds earthiness to yellowfin tuna served with salted blackberry and perilla leaves. Paroo Kangaroo arrives on burghul crackers, in a tartare with black fungus and smoky charcoal hummus, the dish adorned with blue scampi roe. Crisp nannygai is a lesson in texture and precision, the fish accompanied by tahini and watercress sauce, sweet leeks and pickled kohlrabi for bite. Service occasionally fades but is generally enthusiastic and well-informed. Any drinks list that includes a Queensland amber amphora wine and serves it by the glass deserves a big tick from us.
