Just like the artworks in the gallery where this light-filled, minimalist restaurant resides in, chef Josue Lopez's food is designed to make patrons think. The dishes extend far beyond clever flavour combinations - a case in point is The Billabong: a beef-dusted eel fillet alongside onion petals with tapioca "eel eggs" in beef consommé that the chef says mirrors the meeting of cattle and eels at outback waterways. More familiar and homely, yet technically elevated, is mutton three ways (shoulder rillettes, roasted belly and loin) flecked with saltbush powder and fringed by sheep's milk feta, sorrel puree and butter-poached leeks, while a Cherry Bauble dessert is an elaborate treat featuring cherry mousse coating a sphere of coconut dacquoise and cherry curd, decorated with wafer-thin slices of cherry. The progressive wine list is dominated by local offerings and a professional, well-trained staff is at the ready to suggest optimal dish pairings
