Mod city smarts gracefully meets wine country heritage in this sophisticated restaurant. Hentley Farm's sleek, glass-walled dining room is surrounded by a vineyard and situated next to a ruggedly handsome stone stable that houses the kitchen and long timber dining tables. It's all estate wines, but some older vintages make great pairings. Yes, the tasting menus are called "journeys", but chef Lachlan Colwill's confident risk-taking will send you on a trip with dazzling high points. There's a sublime snack of kangaroo with blue cheese sauce and fresh-picked wild asparagus tenderly dressed in sheep's milk and topped with the salty pop of salmon eggs. A few menu mainstays have been refreshed, including kingfish in verjuice with diced smoky mettwurst and puffed wild rice, with Colwill using fewer tricks and demonstrating more reverence for superior produce than when the restaurant launched five years ago.
