Take a journey along dusty Barossa back roads to reach Hentley Farm, a restored stable transformed by the addition of an elegant glass-walled dining pavilion overlooking vines and gum trees. Settle into high-backed chairs for dégustation menus appropriately called "journeys". Lachlan Colwill's team is bursting with ideas, many evident in snacks that push boundaries – whole grilled sardine wrapped in local seaweed on a sushi rice cracker, a slice of Russian Red tomato sharing a tart case with grilled peach and salmon egg. Colwill also re-examines hero ingredients; kingfish with puffed grains is now presented as sashimi with roasted shallot and mint, while grilled beef tongue is piqued by yuzu mustard cream with a hint of blue cheese. Hentley Farm wines are the sole choices, but older vintages provide smart pairings to the bold procession of contrasting textures.
