The snacks barrage at Igni is a bold move. How do you follow an appetiser course consisting of brilliant morsels like oyster emulsion in baby cos, chicken skin topped with cod roe and intense smoke-cured ocean trout? Aaron Turner answers the question emphatically and confidently with finely tuned dishes that star the ingredients and the smoke and char of his kitchen's central grill. Dutch cream potatoes are magical with a cheesy whey sauce and smoked salmon roe while an inspired barramundi wing is confit with butter then charred and caramelised on the grill. There's restraint, nuance and sincerity here, in the food, the clean-lined room, the warm service and even the unassuming location. Add a well-formed wine list mixing interesting local and off-shore labels from small producers and you have an exceptional experience that no self-respecting diner should miss.
