This regional restaurant pioneer has held the line since 1984 and has a crammed trophy cabinet to prove it. Well-drilled floor staff work the elegant dining room, hitting the right formal-country charm note while delivering dishes that read fluently from the seasonal-regional script. Desserts might take advantage of the Lake House orchard's plums, serving various varieties with a subtly flavoured liquorice mousse. Expertly dry-aged and roasted duck from the nearby Macedon Ranges is teamed with local figs and radicchio. A fennel custard topped with salmon roe accompanying a sliver of deep-flavoured ocean trout suggests the kitchen is engaged and light on its feet. The vast wine list champions the local while also gathering the great, good and pricey from across the globe. Don't forgo a pre-dinner drink on the terrace – the aperitivo list is almost as impressive as the view.
