Rockpool is the go-to for serious steakhouse action. There’s a reliable sense of occasion from the vast room’s leather-and-timber musculature and the kitchen’s wood grill that echoes the casino’s riverside fireball show in miniature. The 15-cut steak list is similarly impressive, name-dropping some of the best in beef – Blackmore, Cape Grim, Gunner – and then delivering in terms of precise, careful cooking. Seafood has a strong presence on the menu, too, though it seems less meticulously treated than it once was. Finger lime napalms all other flavour in a fish crudo while the prawn oil with crab and tough semolina noodles lacks balance. Sides form their own attraction and with prices this hefty, they should. Service can be distracted, though the wine list is represented with enthusiasm appropriate for a collection that offers great drinking at all price-points.
