Neil Perry's steakhouse is a luxurious dining experience. White-jacketed waiters, cabinets of dry-ageing beef, and leather seating set the scene for families celebrating birthdays with a zero at the end, alongside bankers toasting deals involving rather more. The food is excellent, relying on first-class materials rather than cheffy flair to impress. There's a simple but sparkling trio of thick-cut crudo - kingfish, ocean trout and yellowfish tuna - dusted with shavings of horseradish for kick and a finger-lime dressing for acidity and zest. More craft is on show with linguine, tossed with spicy prawn oil, spanner crab and lemongrass. Steaks are the fundamental draw: dry-aged to varying gradations of flavour, from David Blackmore or Cape Grim, soundly cooked, and with a heavy-hitting list of wines to match. Pastry skills are shown off to excellent effect by an architectural chocolate and hazelnut millefeuille, freshened with vanilla ice-cream. A-list luxe.
