It's a wine bar with outstanding regional cooking, a coffee stop and a bottle shop, a restaurant without rules. The Aristologist, owned by former Orana manager Aaron Fenwick and winemakers Anton van Klopper and Jasper Button, serves as entry point to the Basket Range scene, with an easy vibe suited to the region's innovative wines. Inside the modestly dressed  ex-butcher's shop, the menu changes weekly to present locally harvested food in its natural glory. Chefs will also rotate regularly, with a high initial benchmark set by Tom Edwards. His poached chicken in anchovy and zucchini broth was sublime. Portions (such as a 200-gram serve of seared Dexter beef) are deliberately modest, so order an array of plates from smoked carrots and kelp with cow's curd, to rockmelon and rhubarb with anise myrtle. Beyond the owners' wines, a walk-in cellar has more than 600 low-sulphur wines by Basket Range buddies and internationals.
