Vue de Monde impresses not just with the views that come with its lofty 55th-floor perch, its dark, sultry interiors, gorgeous cutlery and glassware, hefty (and heftily priced) wine list and crack service from a young team, but for holding its position in Melbourne's premier restaurant league for so long. Staying at this level takes some doing but there's no flagging energy here as executive chef Justin James strikes a balance between the fresh and the familiar. Crushing liquid nitrogen-frozen petals and sorrel leaves in a mortar and pestle or barbecuing a marron snag over charcoal at the table are part of the Vue experience - playful, interactive - while other dishes like a gorgeous broth with turnips and emu "jerky", celeriac teamed with truffles and smoked eel or barramundi skin, cheek and throat laid artistically over a whole fish skeleton, bring serious, skilful cooking and flavour to the table. It's a grand performance, turbo-charged by the view. And the longevity.
