Relish those blissful riverfront views and brace yourself for the bounty of the Queensland coast and hinterland, as seen through a unique Japanese-style lens. A dashi-boosted omelette made with guinea fowl eggs, perhaps, served with sake-poached scallop, eel and crisp tonburi fern seeds; or neatly portioned Banyard quail from the Darling Downs, marinated in nikiri soy, grilled over binchotan and served on corn purée with burnt lime powder and hijiki seaweed. Offerings are precise, like the black-clad staff who monitor the gallery-like room laden with gold-leaf art and white leather banquettes. By the glass, wine choices range from a Western Australian pét-nat to a Japanese cabernet blend, and the annotated sake line-up is impressive. Shiso-embellished poached peach, with jaboticaba granita and savoury-sweet buckwheat custard, carries the flair into dessert.
