Rolling vineyards before you. A thoroughly modern cellar door around you. In your glass, wine from one of the region's rising stars: life in this scenic corner of Margaret River ain't half bad. While Wills Domain has introduced more casual dining options - vino-appropriate snacks at the
cellar door; an unstructured restaurant carte where charcuterie, large cuts of meat and other share-friendly winners rule - Seth James's best work is still found on his tasting menus. He isn't scared of technique, but keeps the edit tight, so preambles like miso-smeared chicken skin give way to painterly plates starring raw kingfish, roe and yoghurt, and shaved asparagus with stracciatella and cured duck egg. A swatch of potato "scales" gives pan-fried red emperor crunch, just as shards of freeze-dried raspberry play off a lush mango parfait to great effect. Service? Fine rather than memorable, but with cooking and views like this, it's all good.
