Marco Faraone and Luke Redington make a formidable team behind the bar. Roman-born, London-trained Faraone, in his time at the dearly departed Lotus in Potts Point, set a new standard in Sydney for cocktail quality, while Redington, a veteran of Eau de Vie, is the sort of guy who downs a crisp Martini before doing his rounds at the boxing gym. In a tumbler half-filled with ice, stir 30ml sweet vermouth, 30ml Amaro Florio or Averna and two dashes of rhubarb bitters, then top with dry prosecco. Garnish with a wedge of grapefruit skewered with a green olive and serve.
