Virgin Australia’s loss is the pastry world’s gain. Jaci Koludrovic once contemplated a career as a flight attendant with the national carrier, before embarking on a pastry career in some of the best kitchens in Sydney and Melbourne, including spells under Damien Pignolet and Philippa Sibley.

At Sydney’s Icebergs group, she and husband Monty Koludrovic are something of a power couple: he the executive chef, she the group pastry chef and mastermind behind that signature tiramisu for two at Icebergs Dining Room & Bar. She sat down with Gourmet Traveller to talk coriander, her advice for young pastry chefs, and getting lectured by her dentist.
