You have to be pretty confident to add your name to a dish called baller tempered dhal. But Africola's chef not only has the guts to do so, he's got the talent to back up his ultra-spiced version too. Duncan Welgemoed's food is big on flavour as well as eco impact. His vegetables with 'nduja dressing celebrates foraging in your garden (and cutting food miles), while sardines with chermoula pays tribute to quality ingredients and one of Africola's earliest menu items.
