- 45 ml Hendrick’s gin
- 15 ml lime juice
- 200 gm caster sugar
- 1For lime syrup, combine sugar, lime rind and 200ml water in a small saucepan and bring to the simmer over medium heat, stirring to dissolve sugar. Set aside until cooled.
- 2Fill a highball glass with ice, add gin, lime juice and lime syrup to taste, top up with soda water and garnish with a lime slice.
