Mat Hewitt and Barry Chalmers, from Brisbane's Bowery (named Bar of the Year at GT's 2009 Restaurant Guide Awards), are neck-deep in plans for a new venue incorporating The Buffalo Club and Skyroom. They'll be mixing Tanqueray, elderflower liqueur and limoncello as their summer refresher (nicknamed the Atomic Tonic) but, for something simpler, they recommend the Kir Royale (pictured centre).
- 10 ml crème de cassis blackcurrant liqueur
- To taste: Champagne or sparkling wine, chilled
- 1Pour cassis into a Champagne flute, top with sparkling wine and serve.
