Spiced limoncello iced tea

An easy digestif to end the evening.

"Limoncello paired with chilled cinnamon and ginger iced tea makes for the perfect digestif to end the evening," says Luke Ashton. Start this recipe a day ahead to chill the limoncello and iced tea.


  • 400 ml limoncello such as Applewood Distillery limoncello
  • Ice cubes, to serve
Cinnamon and ginger iced tea
  • 3 cinnamon quills, broken into small pieces
  • 10 gm ginger (about 2cm), finely grated

    For iced tea, bring 600ml water to the boil, add cinnamon and ginger, then reduce heat to low. Simmer for 10 minutes, then remove from heat and cool. Strain, then pour into a sterilised glass bottle and refrigerate until chilled.

    Combine limoncello and 320ml iced tea in a sterilised glass bottle and seal, then refrigerate to chill (overnight). One hour before serving, place bottle in the freezer.

    To serve, shake bottle vigorously to combine any ice crystals that may have formed. For 1 serve, pour 90ml into a small stemless wine glass and top with a large ice cube.
