“We often serve this very Italian aperitivo as a welcome drink to guests at Gertrude Street Enoteca,” says Brigitte Hafner. “It’s a lovely way to end an afternoon and start the evening – it’s refreshing and not very alcoholic. You can use a short glass or dress it up in a wine glass. And it’s also nice with a green brined olive.”

1.Three-quarter fill a 250ml glass with ice, pour in prosecco, Aperol and vermouth and mix. Serve with orange slice and a dash of soda.

Note Maidenii vermouth is available from select bottle shops.
