Gio Spritz

Australian Gourmet Traveller Italian cocktail recipe for Gio Spritz by Fratelli Paradiso restaurant in Sydney.

Gio Spritz


  • 90 ml dry white wine
  • 30 ml Aperol
  • 2 green Cerignola olives, a little of the brine reserved
  • Thinly peeled rind of 1 orange
  • 30 ml soda water, or to taste

    Combine wine, Aperol, olives, brine and orange peel in a tumbler filled with ice cubes, top with soda and serve.
