Honey and Thyme Daiquiri

Honey and Thyme Daiquiri
“This drink also works well with crushed ice, in which case you don’t need to shake so hard and fast, or strain.” – Matt Bax
You’ll need to begin this a day ahead.


  • 15 ml lime juice
  • 10 ml honey and thyme water (see note)
  • ½ fresh fig
  • 60 ml rum (see note above) (¼ cup)
  • To garnish: sprig of thyme

    Muddle all ingredients except rum to a bar glass or shaker.

    Add rum and ice cubes to shaker, shake hard and fast, then strain into a coupe or martini glass. Float a sprig of thyme to garnish and serve.


For honey and thyme water, dissolve honey in an equal amount of hot water. Add a few sprigs of thyme and steep overnight to allow the thyme flavour to infuse.
