Supposedly named after an operation that involved the transplant of monkey organs.


  • 45 ml gin (see note)
  • 45 ml fresh orange juice
  • 20 ml pomegranate molasses (see note)
  • 1 tbsp absinthe (see note)

    Add ingredients to a shaker or bar glass half-filled with ice. Shake hard and fast, strain into a chilled large martini glass and serve.


Bax uses Plymouth gin and Lemercier absinthe. Pomegranate molasses is available from Middle Eastern and gourmet food stores.
