Ingredients

  • 1 tbsp olive oil
  • 4 golden shallots, thinly sliced
  • 4 chicken Marylands, flesh slashed to the bone at intervals
  • 2 small swedes (about 400gm), thinly sliced
  • 250 ml apple cider
  • 2 thyme sprigs
  • 150 gm crème fraîche
  • To serve: frisée and apple salad

    Preheat oven to 200C. Heat olive oil in a wide casserole over high heat, add shallot, stir until just tender (2-4 minutes), remove from pan and set aside. Add chicken to pan and cook, turning occasionally, until just golden (3-5 minutes). Add swede, shallot, cider and thyme, season to taste, bring to the boil, then transfer to oven and bake until chicken is cooked through (20-30 minutes). Stir in crème fraîche and serve hot with frisée and apple salad.
