Mango daiquiri
The Daiquiri is thought to have been created at the turn of the century in the town of Daiquiri in Cuba. As the story goes, a local businessman who had run out of imported gin had to resort to using local rum for his drinks. At the time, the rum was of unreliable quality, so to mask its flavour other ingredients were added.

Ingredients

  • ½ cup sugar syrup
  • 24 ice cubes
  • 150 ml Havana Club white rum
  • 100 ml lime juice, plus extra lime wedges, optional, to serve
  • 2 cups chopped mango flesh (about 1 large mango)

    Process all ingredients except sugar syrup in a blender until smooth, then add sugar syrup and process until combined. Taste daiquiri, adjust sweetness, if necessary, with a little more sugar syrup, then divide immediately among 4 chilled glasses and serve with extra lime wedges, if using.
