Open prawn sandwiches with anchovy mayonnaise


  • 225 gm mayonnaise (¾ cup)
  • 4 anchovies, finely chopped
  • ½ garlic clove, finely chopped
  • Finely grated rind and juice of 1 lemon
  • 8 thick slices seeded sourdough bread
  • 1 baby cos, leaves separated, torn
  • 1 baby fennel bulb, thinly sliced, placed in iced acidulated water
  • 24 medium cooked king prawns, tails intact

    Combine mayonnaise, anchovies, garlic, and lemon rind and juice in a bowl, and season to taste. Spread bread slices with a little anchovy mayonnaise, top with lettuce, drained fennel and prawns, season to taste and serve drizzled with extra anchovy mayonnaise.
