Add some grilled prawns and crusty bread to make this salad more of a meal.
- 500 gm watermelon, cut into 2cm pieces
- 60 gm feta
- 80 gm Kalamata olives
- ½ Spanish onion, thinly sliced into rings
- ¼ cup coarsely chopped dill
Red wine vinaigrette
- 2 tbsp extra-virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp pomegranate molasses
- 1For red wine vinaigrette, shake ingredients in a jar with a screw-top lid until well combined. Season to taste and shake again.
- 2Combine remaining ingredients in a large bowl, drizzle dressing over, stir to coat and serve.
