Broccoli, the much maligned vegetable of children, is a firm favourite for our autumn and winter cooking. Broccoli with cheese is a no-brainer: blend the vegetable into a soup, with cheesy toast on the side; or make a broccoli-cheese bake for the side dish to end all side dishes. And there's much to be said for its tender-stemmed cousin broccolini, too. Both are winners in salads, pastas and soups for winter and beyond.
