Mozzarella melted on top of lasagne, taleggio oozing out of a toasted sandwich or four cheeses piled high on a pizza: it's hard to resist the allure of a cheesy dish. Whether you add it at the start of a meal in the form of fresh mozzarella or turn a simple soup into something more substantial with some Gruyère toasts, cheese is a surefire way to amp up the flavour of savoury dishes. The only rule is: the more the better.
