50 mllemon juice (about 1½ lemons) 200 mlpomegranate juice250 mlof a medium bodied white wine (a good local semillon, pinot gris or sauvignon blanc are all great for this)60 mlwhite rum50 mlsugar syrup10-15mint leavesTo serve:½ lemon, cut into wedges and ¼ cup fresh pomegranate seeds (optional)
Add the lemon and pomegranate juices, white wine, white rum and sugar syrup into the 1 litre size carafe with the mint leaves and pieces of fruit. Mix and top with ice just as guests arrive. Pour into wine glasses and enjoy!
Note To double the quantity and serve 12, place into 1.5 litre
carafe without ice, refrigerate for an hour & serve into wine
glasses half filled with ice.
