Shaking things up with Adelaide’s best cocktail bar.
“Dana Whyte, one of the bar’s co-owners, and I encountered Rye Maple Fizz this past January at Rickhouse in San Francisco, a buzzing little cocktail oasis on Kearny Street,” says Clever Little Tailor’s bar manager Marshall King. “I think it’s a delicious spacing drink to sit on while you contemplate something stronger. Combine 20ml rye whiskey, 20ml lemon juice, 15ml grade-B maple syrup, 15ml egg white and two dashes of Angostura bitters in a shaker or mixing tin; shake vigorously without ice for 10 to 15 seconds (this emulsifies the egg white and creates the rich foam that should top a fizz). Add ice to fill, shake hard, then double-strain into a tall, chilled glass. Pour soda water into the shaker to pick up the remnants of the drink, then pour into the glass to fill it. Grate a little cinnamon on top to garnish and serve.
