The rooms
Guests have the option to stay in the main house (where rooms are furnished with four-poster beds and marble bathrooms) or in a selection of new modular cabins, just a short walk from the main quarters. The cabins boast an impressive deck with an outdoor bath overlooking Morton National Park (with bath salts and LaGaia amenities) and cast-iron freestanding fireplaces for extra snug surrounds.
Food & drink
Impressive outdoor Argentinian fire feasts are a regular event here, and slow-cooked chooks, coal-kissed chorizo and grilled veggies emerge from a dramatic fire pit cooking set-up. These events are bolstered by a year-round Fire Kitchen Restaurant, with asado-inspired eats, and George’s Bar, where more casual Italian bites are served in stylish surroundings. If you fancy venturing out, Eschalot in Berrima is a short 25-minute drive away.
The service
Sitting with a glass of bubbles and a hot cheesy empanada may be one of the best ways to check into a hotel. It sets the tone for the stay (good food, cosseted warmth and solid service) while thoughtful details, such as hot water bottles and valet parking, bring a touch of silver service to every stay.
