Barbecued Balmain bugs with charred corn salsa

Served with a punchy charred corn salsa, these barbecued bugs will be your warm weather favourite.

Method

1.Preheat a lightly greased barbecue or char-grill pan to high heat. Brush corn with oil and cook, turning occasionally until charred (6 minutes). Brush cut side of cucumbers with oil and cook until lightly charred (2 minutes). Cut kernels from corn, place in a bowl with cucumber, spring onion and black beans. Add lime juice, season to taste and toss to coat.
2.Brush cut side of bugs with oil and season to taste. Barbecue, cut-side down, until meat is lightly charred and edges start to pull away from the shell (4 minutes). Turn and cook until meat is just cooked (3 minutes; see note).
3.Meanwhile, combine Cajun spice, mustard, garlic, sugar and butter in a small saucepan over medium heat, stirring to melt butter (2 minutes). Season to taste, set aside and keep warm. Place bugs on a large platter, brush with Cajun butter and scatter with oregano. Serve salsa and remaining butter on the side. cooking tip
