Anchored in sustainability and nature as much as it is luxury, 1 Hotel Melbourne is the city’s newest high-end accommodation hotspot. Located in Melbourne’s Docklands, this is the first Australian outpost for the brand, which has properties in Toronto, New York, Paris, Copenhagen and Kauai.
The hotel’s design integrates the heritage-listed Goods Shed No. 5 into its structure, preserving elements like original wharf timbers. Meanwhile, biophilic design principles are integrated throughout its 277 rooms and shared spaces, its façade featuring more than 2000 living plants and floor-to-ceiling windows. Rooms are positioned to have views out to the Yarra River and skyline, and create a sanctuary-like feel with reclaimed timber finishes, locally-sourced bed linens and low energy LED lighting throughout. In-room wellness will include equipment available to hire combined with sound immersion and guided breathwork from Alo Moves; or you can also unwind at the onsite Bamford Wellness Spa, where offerings include Normatec recovery compression boots, dry sauna and holistic facial treatments.

The hotel also has its own 1 Less Thing initiative in partnership with a chosen charity, inviting guests to leave behind an item to donate to charity, so it can be repurposed. “Luxury these days is more about what’s felt than what’s seen,” says managing director, Damon Page.
From a food perspective, Sydney chef Mike McEnearney has been enlisted to execute his seasonal, low-waste dining approach at the hotel’s restaurant, From Here by Mike — with bookings now open here. Taking the producer-led approach that he’s honed as director of Carriageworks’ markets in Sydney and at his own restaurant, McEnearney’s locally sourced ethos will be deployed with Victorian producers showcased on the menu. “I wouldn’t be in a partnership if they didn’t share the same values as me,” says McEnearney.

Menu-wise, expect dishes to trade hotel dining standards for a fresher approach. Think freshly shucked oysters with pickled daikon and finger lime vinaigrette; twice-baked goat’s cheese soufflé with rosemary cream; or wood-roasted cockerel with vadouvan sauce, cime di rapa and and blackened leeks.
