Papi Chulo

Sitting pretty on the Manly Wharf, Papi Chulo is a welcome sight for the ferry commuter, its copper-and-tile-detailed design conjuring the Americas just as surely as the siren song of the sweet musk of smoking meats. The kitchen plunders both continents with glee: empanadas oozing raclette and wild greens sit nicely alongside smoked hot wings and lush pea guacamole with tortilla chips. The main event, though, is the platter of hot and slow-smoked lamb ribs, melt-in-your-mouth wagyu brisket and smoky, tender pork belly, all served with soft bread rolls and pickles. Take spoon in hand for the sweet, simple likes of the warm giant cookie topped with ice-cream, butterscotch and macadamia, or opt instead to take advantage of a richly varied booze offer, from smart wines and unusual beers to a wealth of well-made rum and tequila drinks. Tables turn, the music pumps and service bustles - it's a hit.
