If the sweet memory of sprinkles matched with beef and cheese hasn’t left your brain since last Mardi Gras, you’ll be happy to hear that Mary’s in Sydney are bringing back their Fairy’s Burger for Mardi Gras week, starting today.

With the parade hitting town this Saturday, the streets are being lined with rainbow flags, CBD Lowes stores are redefining “high-vis gear”, banks are sparkling with GAYTMs and costume prep is in full swing. And the Mary’s boys, no strangers to a party, are also doing their bit. The limited-edition Fairy’s Burger sees the steamy buns of the classic Mary’s signature burger or the popular cheeseburger engage in a saucy (but safe) genre-bending liaison with fairy bread, emerging bedazzled in the most celebratory of ways with hundreds and thousands.

“It’s like there’s a Gay and Lesbian Mardi Gras in my mouth and everyone’s invited,” said our volunteer taster, GT chief critic Pat Nourse. “No burger in the city comes anywhere this close to representing the diversity of Sydney’s sexuality in one hot, greasy handful,” he added. “And hey, sprinkles.”

The burger is available at both Mary’s in Newtown and the CBD and this year also at The Unicorn Hotel, and if you slap down an extra buck for it, Mary’s will match your dollar, with proceeds going to charity.

Though some may be hitting the gym in preparation for the weekend, we’ll be doing as the Mary’s crew suggest: supporting a great cause and getting fat while doing so. Happy Mardi Gras.
