Small and perfectly formed, Fleet manages to feel both worldly and intimately connected to its setting all at once. There's faith placed in the good work of local producers, be it the sweet-sour jolt of Brazilian cherry muddled with gin and sake in an opening cocktail, or oysters grown in Brunswick Heads by Noel Baggaley and finished in Tweed River. And Josh Lewis brings an educated palate to bear on the spoils, complementing the creaminess of said oysters with the sharpness of sheep milk's yoghurt and shavings of macadamia, say. This is cooking that's both personal and present, the menu tweaked to suit your whims and dishes landing mere moments after being plated: the signature sweetbread schnitzel on soft white bread spread with a ton of anchovy mayonnaise is both crisp and hot, a congee of millet and mud crab is dressed with a single egg yolk warmed by the heat of the grains. The cosy 14-seat space, an exceptional wine list built with care and affection, and service about as warm and present as service gets only enhance the sense of immediacy. This is destination dining at its best. Don't miss it.
