Metre for metre, this might just be the best restaurant in Australia. The food certainly holds its own against the finest in the land. Fleet is very small, barely a dozen seats, and Josh Lewis makes the most of this stage, dishes going from his hands to his guests in moments, so none of the immediacy of, say, plump oysters with the lactic tang of sheep's milk yoghurt and shavings of macadamia is lost, and the paper-fine delicacy of bunya nuts topping delicious mud crab folded through ribbons of zucchini arrives perfectly intact. Fleet is intimate where other fine-diners are impersonal; its lines may be cool but host Astrid McCormack fills the room with warmth, sharing her joy in Lewis's deft inventions, and her own finds on the concise and brilliant wine list. This is a special place, entirely worthy of pilgrimage but splendidly free of pomp and fuss. Don't miss out.
