Sitting on Burleigh Beach watching white-tipped rollers break is a pleasure – it's even more so if your bit of beach coincides with the space occupied by Rick Shores. This airy split-level room is unfussy with picture windows to let the ocean views dominate. You'd be happy with a beer. Instead there's an adventurous drinks list and casual yet practised service. A bug roll (or two) is mandatory – chunks of slipper lobster in a bronzed batter wrapped in a bun with sriracha sauce, lime and mayo; ditto oysters zinged up with Thai-style vinaigrette. Crab and prawn dumplings are redolent of the sea in dashi enriched by bonito and ginger; yellow prawn curry starts sweet then gains depth as chilli heat builds and the charred roti kicks in. Desserts maintain the pick 'n' mix pan-Asian momentum: cue pavlova with black-sesame meringue, mandarin, matcha ice-cream and yuzu curd.
