The offspring of one of Tasmania’s best restaurants and located in the same 1840s former flour mill on the banks of the Tamar River, Stillwater Seven is a moodily dark-hued boutique hotel jewel and the perfect base for exploring the joys of northern Tasmania. Opened in 2019, it perfectly encapsulates the food, wine and design focus of the ‘new’ Tasmania. 

The rooms 

Each of the seven compact but luxurious suites is unique, beautifully designed by local architectural powerhouse Cumulus Studio. The structural quirks of the old mill – hefty exposed wooden beams, paned windows with river views – seamlessly integrate with chic, minimalist bathrooms, furniture and art from local makers and an ovation-worthy, pantry-like timber minibar, a masterpiece of style and substance. 

Food & drink 

Dinner or lunch in Stillwater Restaurant is a must, the blending of a clever cuisine-hopping menu, a Tasmanian produce focus and unfailingly excellent service is a recipe for good times. That’s if you can tear yourself away from the minibar’s cornucopia of locally produced meats, cheese, snacks, chocolate, wine and cocktails. A continental breakfast, including fresh-baked bread, is served in-room.
