In this recipe Chan, a Malaysian-born Australian cook, has looked to her birth country for culinary inspiration. Dried and red chillies comprise the hot and spicy component of this curry; the garnish of thinly sliced makrut lime leaves is the fragrant finish.

Mac and cheese is the “ultimate comfort food” for Chan – it’s the perfect all-in-one, make-ahead dish that can be upscaled to feed a crowd. Add truffles to the heady combination of molten cheese and pasta, and you have a very luxurious macaroni and cheese indeed.
